# How to read a USDA establishment record

> Establishment numbers, activities, the FSIS size class, and the 360-day lookback.

## How to read these records

### The establishment number

M is a meat establishment, P a poultry establishment, G an egg product plant. A plant with several grants carries
several numbers, written together (M123+P123). It is the number inside the round USDA mark on a package.

### Size class

FSIS's own definition: large, 500 or more employees; small, 10 or more but fewer than 500; very small, fewer than
10 employees or annual sales under $2.5 million. FSIS notes that this class does not correlate highly with
production volume.

### Activities, slaughter and processing

“Approved activities” is what the grant of inspection covers today. “Slaughter” and “processing in the last 360
days” come from the FSIS supplement and look back a year: a plant can be approved for an activity it did not carry
out, and the reverse during a change.

### What is not here

establishments.
